This

How easy is it?

Hopefully very

I want to adapt one of my OR Swift caps to a Lawrence of Arabia style....

Some reasonable weight silk would work well I think.

I had one of the OR caps with the add-on neck cape, but didn't really like it on trail, a bigger lighter neck covering appeals...

Lightweight linen would be better in the heat and absorb sweat - easier to sew. I'd do it by hand - small very careful neat sitches required (and patience).

Isn't linen quite sweaty? I never like to wear my linen shirts in summer. I like linen in winter but worse than cotton or silk in summer... But maybe its just me?

Depends on the thickness weight of the fabric.
I find lightweight linen by far the coolest of fabrics in hot climates - absorbs sweat very well.
2 years ago in NW OZ (overlanding and camping rough) I had 2 cotton, 2 linen and 2 Rohan tropical (man-made fiber) shirts. The linen were by far the nicest to wear - I even swopped one of the (sweaty) man-made shirts for a 'dirty' linen one just for the comfort.
Heavy linen is just heavy.

I'm thinking about modifying one of my caps using self adhesive/sew on Velcro dots so it's detachable. Using some material about the thickness of a good handkerchief :finger:
